Built for the food you already have.

This white chicken chili turns cooked chicken, two cans of white beans, and a few fridge vegetables into a creamy one-pot dinner. The beans do the thickening, so there is no heavy cream to buy and no roux to manage. It is especially useful for the uneven pieces left after a roast or rotisserie chicken.

Build the flavor before adding liquid. Softening the onion and pepper or celery takes away their raw edge; warming cumin, oregano, garlic, and green chiles in the oil wakes up the spices. Mash one can of beans with a little stock directly in the pot, then leave the second can whole for texture.

Make it from what is open

Cannellini, great northern, navy, or butter beans all work. No green chiles? Use a chopped jalapeño, a spoonful of mild salsa verde, or extra bell pepper plus a pinch of chilli flakes. Frozen corn is easy, but diced zucchini, spinach, or a handful of chopped kale can take its place. Add sturdy vegetables early and leafy greens with the chicken.

For a richer finish, stir plain yogurt into individual bowls rather than boiling it in the pot. Grated cheese, crushed tortilla chips, lime, avocado, or cilantro/coriander are optional finishes, not a shopping list. If the chili becomes thicker than you like, loosen it with stock or water a little at a time.

Use cooked chicken safely

Only use chicken that was refrigerated promptly and has stayed cold. Add it near the end and reheat the finished chili to 165°F / 74°C throughout. USDA guidance recommends using most refrigerated cooked leftovers within three to four days; when storage time or temperature is uncertain, discard the chicken rather than trying to rescue it. Read the USDA leftovers guidance.

Cool extra chili promptly in shallow containers and refrigerate it. Reheat only the portion you plan to eat until steaming hot.

More cooked chicken can become creamy leftover-chicken pasta or rotisserie-chicken spinach pasta. If the crisper drawer needs more attention than the chicken, make clean-out-the-fridge vegetable soup.

How to make it

  1. 01

Warm the oil in a large pot over medium heat. Add the onion and pepper or celery, then cook for 6 to 8 minutes until softened.

  2. 02

Add the garlic, cumin, oregano, and green chiles. Stir for 30 seconds until fragrant.

  3. 03

Add one can of beans and 1 cup of the stock. Mash some of the beans against the side of the pot to create a creamy base.

  4. 04

Stir in the remaining beans and stock. Bring to a simmer and cook uncovered for 15 minutes.

  5. 05

Add the cooked chicken and frozen corn. Simmer for 5 to 7 minutes, until the chicken is steaming hot and the chili reaches 165°F / 74°C.

  6. 06

Add the zest and juice of half the lime. Taste, season with salt and pepper, and serve with any toppings you already have.
