Rotisserie Chicken Recipes: 20-Minute Creamy Chicken and Spinach Pasta
The fastest thing to do with a rotisserie chicken. Shredded chicken, spinach, and a light garlic cream sauce on the table in 20 minutes.

A supermarket rotisserie chicken is the best shortcut in the shop, and most rotisserie chicken recipes overcomplicate what to do with it. The chicken is already cooked. All it needs is somewhere warm and flavourful to land — here, a light garlic cream sauce with spinach, tossed through pasta in 20 minutes.
One bird usually gives about three cups of shredded meat, which is exactly this recipe, with the carcass left over for stock. That is two meals from one chicken.
Strip the whole bird while it is warm
Pull the meat off as soon as the chicken is cool enough to handle. It comes away far more easily warm than cold, and you will get noticeably more meat off the back and the underside than you expect.
Keep the carcass. Simmered with an onion, a carrot, and a bay leaf for 60 to 90 minutes it produces genuinely good stock, which is the base for easy chicken noodle soup later in the week.
Storing and reheating it safely
Refrigerate the meat promptly rather than leaving the whole chicken on the counter. USDA guidance recommends using refrigerated cooked chicken within three to four days, and reheating leftovers until steaming hot throughout — 74°C / 165°F if you are checking with a thermometer. If you are not going to get to it within a few days, shred the meat and freeze it flat in a bag. It drops straight into this pasta from frozen with a few extra minutes in the pan.
Change it to fit the fridge
The cream is the flexible part. Crème fraîche gives a slight tang, full-fat Greek yoghurt works if you take the pan off the heat first, and a splash of pasta water with plenty of Parmesan makes a lighter sauce with no cream at all.
Spinach is here because it wilts in seconds and is usually the thing in the fridge with the shortest life — more ways to use it up here. Frozen peas, chard, or kale all substitute directly.

How to make it

Bring a large pan of well-salted water to the boil and cook the pasta until just al dente. Reserve a mug of pasta water before draining.

While the pasta cooks, pull the chicken from the carcass in rough shreds. Keep the bones for stock if you want them.

Warm the oil or butter in a large frying pan over medium heat. Add the garlic and cook for 1 minute, until fragrant but not coloured.

Add the spinach a handful at a time, letting each batch wilt before adding more. If using frozen spinach, add it all and heat through.

Stir in the cream and bring to a bare simmer. Add the shredded chicken and heat for 3–4 minutes, until steaming hot throughout.

Add the drained pasta, the Parmesan, and a good splash of pasta water. Toss until the sauce is glossy and coats every piece, loosening with more water as needed.

Finish with lemon zest, a squeeze of juice, black pepper, nutmeg if using, and more salt to taste.
