If you are asking what can I make with chicken and rice, the simplest useful answer is a one-pot lemon chicken rice. The chicken browns first, the rice cooks in the same pan, and frozen vegetables go in near the end. You get a complete dinner without needing a separate sauce or a second pan.
This is a structure rather than a rigid ingredient list. Keep the ratio of rice to stock, then use the onion, herbs, frozen vegetables, and citrus you already have. The browned chicken gives the rice flavour; lemon at the end keeps the finished pan from feeling heavy.
Which chicken and rice work best?
Boneless chicken thighs are forgiving because they stay juicy while the rice finishes. Chicken breast works too: use pieces of similar thickness and start checking them a little earlier. The USDA says poultry should reach 74°C / 165°F in the thickest part, measured with a food thermometer. See the USDA chicken guidance.
Use ordinary long-grain white rice or basmati. Rinse it until the water is mostly clear so the finished grains stay separate. Brown rice is not a direct substitute here because it needs a different amount of liquid and much longer cooking.
Make it fit the fridge
Frozen peas are the easiest finish, but sweetcorn, chopped peppers/capsicum, spinach, or a handful of mixed vegetables all work. Add sturdy raw vegetables with the onion; add quick-cooking or frozen vegetables near the end.
No lemon? Use a small splash of vinegar after cooking. No dried oregano? Thyme, parsley, or a general mixed-herb blend will keep the same shape. If you already have cooked chicken, skip the browning step and fold it through for the final few minutes so it heats without becoming dry.
What to make next
Any cooked chicken left after this meal can become easy leftover chicken pasta. Extra rice is ready for 15-minute egg fried rice, provided it was cooled and stored safely. A small collection of unused vegetables can go into clean-out-the-fridge soup.
Refrigerate leftovers promptly. USDA guidance recommends using refrigerated leftovers within three to four days; if you are unsure how the food was stored, discard it. Read the USDA leftovers guidance.

How to make it
- 01
Pat the chicken dry and season it with the salt and black pepper.
- 02
Warm the oil in a wide, heavy-based pan with a lid over medium-high heat. Brown the chicken for about 3 minutes per side, then move it to a plate. It will finish cooking with the rice.
- 03
Lower the heat to medium. Add the onion and cook for 4 minutes until softened. Add the garlic and cook for 30 seconds, then stir in the rinsed rice and dried herbs.
- 04
Pour in the stock and scrape up the browned bits. Return the chicken and any juices to the pan. Bring to a gentle simmer, cover, reduce the heat to low, and cook for 15 minutes.
- 05
Scatter the frozen vegetables around the chicken, cover again, and cook for 5–7 minutes, until the rice is tender and the chicken reaches 74°C / 165°F in its thickest part.
- 06
Take the pan off the heat and rest it, covered, for 5 minutes. Fluff the rice, add the lemon zest and half the juice, then taste and add more lemon, salt, or pepper as needed.
