If you are choosing what to do with leftover taco meat, stuffed sweet potatoes combine the hot, savory filling with whatever fresh toppings are already open. It is a useful way to turn one or two portions of seasoned meat into four complete servings without cooking another batch of beef.
Sweet potatoes take time in the oven, but very little attention. The filling warms during the final ten minutes, so both parts arrive hot together.
Stretch the taco meat without losing the flavor
Beans, corn, cooked lentils, or finely chopped vegetables can double the volume of a small container of taco meat. Add a splash of water, stock, or salsa before reheating; chilled ground meat dries quickly in a bare pan.
If you are starting with raw beef rather than leftovers, use the seasoning and cooking method in this ground beef taco skillet. For this recipe, the meat must already be fully cooked before it goes into the reheating pan.
Choose toppings by what needs using
Cheddar, Monterey Jack, feta, or no cheese at all can work. Plain yogurt replaces sour cream, while salsa or lime adds acidity. Wilting spinach can be stirred into the hot meat for the final minute; sturdy lettuce or cabbage is better added cold.
Roasted peppers, onions, zucchini, or broccoli also make good fillings. Chop them and warm them with the meat, following the same flexible approach used for leftover roast vegetables.
Leftover taco meat safety
Use taco meat only when it was refrigerated within two hours after cooking and kept cold. Heat the filling to 165°F / 74°C throughout, and use most refrigerated cooked leftovers within three to four days. Discard meat that was left at room temperature for more than two hours, has mold, an off odor or slimy texture, or comes with an uncertain storage history. Do not rely on extra spice or oven heat to make mishandled meat safe. See the USDA leftovers and food safety guidance.

How to make it
- 01
Heat the oven to 425°F / 220°C. Scrub the sweet potatoes, dry them, pierce each several times with a fork, and place on a lined baking sheet.
- 02
Bake for 45–55 minutes, depending on size, until a knife slides easily through the center.
- 03
During the last 10 minutes, combine the taco meat, beans or corn, and liquid in a skillet. Cover and warm over medium-low heat, stirring occasionally.
- 04
Check that the meat mixture reaches 165°F / 74°C. Add another splash of liquid if it begins to catch.
- 05
Split each sweet potato and fluff the center with a fork. Spoon in the hot taco meat, add cheese, and finish with the vegetables and toppings.
