If you are deciding what to do with leftover steak, crisp quesadillas are a fast answer for cooked beef that can turn tough when reheated on its own. Slicing the steak thinly, surrounding it with cheese, and warming it inside a tortilla protects it from too much direct heat.
The recipe is deliberately light on filling. That helps the cheese seal the tortilla and gives the steak time to heat through before the outside gets too dark.
Slice cold steak across the grain
Cold steak is easier to cut cleanly than warm steak. Look for the long lines running through the meat, then slice across them rather than in the same direction. Shortening those muscle fibers makes each bite easier to chew, whether the original steak was rare or well done.
If there is only a small amount, stretch it with beans, corn, peppers, mushrooms, or wilted spinach. The same seasoned beef-and-vegetable idea drives this one-pan taco rice skillet, so almost any taco-friendly odds and ends will fit.
Use the cheese and tortillas you have
Monterey Jack and cheddar are obvious choices, but mozzarella, pepper Jack, a mild Gouda, or a mixture of grated cheese ends all work. Flour tortillas fold most easily. Small corn tortillas are more fragile, so use two per quesadilla and cook them flat instead of folding.
Serve with jarred salsa, yogurt in place of sour cream, or a squeeze of lime. A nearly empty bunch of cilantro can become green herb sauce. For other quick combinations built around shelf-stable ingredients, keep these 15-minute pantry dinners nearby.
Leftover steak safety
Use steak only if it was refrigerated within two hours after the first meal and kept properly chilled. Reheat the quesadilla filling to 165°F / 74°C, measured in the center, and use refrigerated cooked leftovers within three to four days. Discard steak that sat out for more than two hours, feels unusually slimy, has mold or an off odor, or has an uncertain storage history. Extra heat does not undo unsafe storage. The USDA leftovers guidance explains cooling, storage, and reheating.

How to make it
- 01
Slice the cold steak thinly across the grain. Toss it with the onion, vegetables, and cumin.
- 02
Lay out the tortillas. Scatter cheese over one half of each, add the steak mixture in a thin layer, then finish with the remaining cheese and fold closed.
- 03
Heat 1 tsp oil in a large skillet over medium heat. Add 2 quesadillas and cook for 2–3 minutes per side, pressing lightly, until golden and the cheese melts.
- 04
Repeat with the remaining oil and quesadillas. Lower the heat if the tortillas brown before the filling is hot.
- 05
Confirm the filling reaches 165°F / 74°C. Rest for 1 minute, cut into wedges, and serve with the toppings.
