If you are wondering what to do with leftover salmon, these crisp-edged cakes turn one or two cooked fillets into lunch or dinner without making the fish dry a second time. The salmon is already cooked, so the goal is simply to bind it gently, brown the outside, and heat the center through.
This version uses an egg, breadcrumbs, and a little mayonnaise for patties that hold together without becoming heavy. Dijon and lemon sharpen the flavor, while green onions or any soft herb keep the cakes from tasting like reheated dinner.
Get the texture right
Flake the salmon into small pieces, but do not mash it into paste. After mixing, give the crumbs five minutes to absorb moisture before deciding whether the mixture is too wet. It should hold when pressed in your palm. Add more crumbs one spoonful at a time; too many will make the cakes dry.
Cold leftover mashed potatoes can replace up to half the crumbs. This makes a softer cake and is especially useful when both leftovers need attention.
Flexible swaps and serving ideas
No green onions? Chives, dill, parsley, or cilantro all work. A spoonful of capers can replace the mustard, and crushed crackers, panko, or gluten-free crumbs can replace ordinary breadcrumbs. Turn herbs that remain after cooking into a quick green herb sauce, or serve the cakes with yogurt, lemon, and black pepper.
For a larger meal, add a simple salad, frozen peas, or roasted vegetables. If you wanted a seafood dinner but only have raw shrimp, garlic butter shrimp follows a different fast route.
Leftover salmon safety
Only use salmon that was refrigerated within two hours of cooking and has stayed cold. Most cooked leftovers should be used within three to four days and reheated to 165°F / 74°C. If the fish sat out longer than two hours, has mold, a sour or ammonia-like odor, a slimy surface, or an uncertain storage history, discard it. Cooking cannot make improperly stored fish safe. See the USDA leftovers and food safety guidance.

How to make it
- 01
Check the salmon carefully for skin and pin bones, then flake it into a mixing bowl.
- 02
Add the egg, breadcrumbs, mayonnaise, mustard, green onions, lemon, salt, and pepper. Fold just until combined, then let the mixture stand for 5 minutes.
- 03
Divide into 8 portions and press each into a patty about ¾ inch / 2cm thick. If the mixture will not hold, fold in another spoonful of breadcrumbs.
- 04
Heat 1 tbsp oil in a wide skillet over medium heat. Cook 4 cakes for 3–4 minutes per side, until crisp and browned. Repeat with the remaining oil and cakes.
- 05
Check that the centers reach 165°F / 74°C, then rest the cakes for 2 minutes before serving.
