Choose vegetables that finish on time
Peppers, mushrooms, zucchini, thin green beans, asparagus, and small broccoli florets fit the timing. Dense carrots, squash, or potatoes should be cut very small or given a five-minute head start.
Use the seasoning you already own
Keep the oil, salt, and acidic splash, then change the spice blend. The last spoonful of pickle brine is especially good here: it adds acidity, salt, and flavor without opening another ingredient.
Always follow your air fryer’s instructions and verify poultry with a thermometer rather than relying on browning alone.

How to make it

Preheat the air fryer to 390°F / 200°C if your model recommends preheating.

Pat the chicken dry. Toss it with 1 tablespoon oil, paprika, garlic powder, oregano, salt, pepper, and the lemon juice.

Arrange the thighs in one uncrowded layer. Air fry for 8 minutes.

Toss the vegetables with the remaining oil and a pinch of salt. Turn the chicken, tuck the vegetables around it, and cook for 7 to 10 minutes more.

Check the thickest thigh with a food thermometer. Poultry is ready at 165°F / 74°C; add a few minutes if needed.

Rest the chicken for 3 minutes, then slice and serve with the vegetables and any juices from the basket.
